In keeping with last week's focus on agua de jamaica, this week we will be exploring another Mexican culinary delight: birria. Birria, a hearty and flavorsome dish, has been warming the hearts of locals and visitors alike in Mexico for generations. Originating from the state of Jalisco, birria has journeyed far and wide, evolving into a comfort food favorite, particularly in regions like Los Cabos. This dish, traditionally made with goat or beef, is celebrated for its rich, savory broth and tender, well-seasoned meat.


The history of birria is as rich as its taste. It's believed to have originated as a farmhand's meal, meant to provide sustenance and warmth during long working hours. Initially crafted from goat meat, birria's preparation and ingredients reflected the local resources and culinary practices, slowly molding into the diverse variations we see today.


At its core, birria is about simplicity and flavor. The key ingredients include:

  • Meat: Traditionally goat, but variations with beef, lamb, or chicken are also popular.

  • Chilies: A blend of dried chilies like guajillo, ancho, or pasilla infuses the broth with depth and warmth.

  • - Spices: Aromatic spices such as cumin, bay leaves, thyme, and marjoram add layers of flavor.

  • Broth: The meat is slow-cooked in a rich broth, allowing the flavors to meld together beautifully.


The preparation involves marinating the meat in a robust mix of spices and chilies, then slow-cooking it until it's fall-apart tender. The result is a comforting stew, often served with tortillas, onions, cilantro, and a squeeze of lime to brighten the rich flavors.
